- 1 lb Brussels sprouts, trimmed and halved
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup honey or maple syrup
- 2 tablespoons olive oil
- Salt and pepper to taste
- Zest of 1 orange
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts on a baking sheet in a single layer.
- Roast in the oven for 20-25 minutes, until tender and caramelized.
- While the Brussels sprouts are roasting, prepare the cranberry orange glaze by combining cranberries, orange juice, honey (or maple syrup), and orange zest in a saucepan over medium heat.
- Cook until the cranberries burst and the mixture thickens, about 10 minutes.
- Once the Brussels sprouts are done, remove them from the oven and drizzle the cranberry orange glaze over them.
- Toss to combine and serve warm.
Notes
- For a vegan option, use maple syrup instead of honey.
- Feel free to add chopped nuts for extra crunch.
- This dish can be made ahead of time and reheated before serving.
