- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the black beans, drained corn, diced red bell pepper, diced green bell pepper, diced red onion, halved cherry tomatoes, diced avocado, and chopped cilantro. Gently stir to mix the ingredients together without mashing the avocado.
- In a separate small bowl, whisk together the freshly squeezed lime juice, olive oil, cumin, and a sprinkle of salt and pepper.
- Pour the dressing over the veggie mixture, tossing gently to coat all the ingredients evenly. Avoid vigorous mixing to keep the avocado intact and creamy.
- Present your cowboy caviar immediately with a side of crispy tortilla chips for scooping.
Notes
Make Cowboy Caviar a few hours in advance but add the avocado right before serving to prevent browning. Experiment with roasted veggies for extra flavor!
