Ingredients

  • 1 cup cream cheese
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup shredded coconut

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, beat the cream cheese and sugar until smooth.
  3. Add sour cream, flour, eggs, and vanilla extract, mixing until well combined.
  4. In a separate bowl, combine cinnamon and brown sugar.
  5. Fold in crushed pineapple and shredded coconut into the cheesecake mixture.
  6. Spread half of the cheesecake mixture into a greased baking dish.
  7. Sprinkle half of the cinnamon-sugar mixture over the cheesecake layer.
  8. Spread the remaining cheesecake mixture on top and sprinkle with the remaining cinnamon-sugar mixture.
  9. Bake for 30-35 minutes or until set.
  10. Allow to cool before slicing and serving.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • Make sure to drain the pineapple well to avoid excess moisture.
