- 1 cup powdered sugar for coating
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk together granulated sugar, brown sugar, and vegetable oil.
- Add eggs, vanilla extract, and peppermint extract to the sugar mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Chill the dough in the refrigerator for 30 minutes.
- Form the dough into small balls and roll them in powdered sugar.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For a stronger peppermint flavor, increase the peppermint extract.
- Store cookies in an airtight container for up to a week.
