Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup couscous
  • 1 cup chicken broth
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix parsley, cilantro, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Marinate the chicken breasts in half of the chimichurri sauce for at least 30 minutes.
  3. While the chicken is marinating, bring chicken broth to a boil in a saucepan.
  4. Add couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
  5. Grill the marinated chicken on medium-high heat for about 6-7 minutes on each side or until fully cooked.
  6. Fluff the couscous with a fork and serve it alongside the grilled chicken.
  7. Drizzle the remaining chimichurri sauce over the chicken and couscous before serving.
