- 4 boneless, skinless chicken breasts
- 1 cup couscous
- 1 cup chicken broth
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix parsley, cilantro, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
- Marinate the chicken breasts in half of the chimichurri sauce for at least 30 minutes.
- While the chicken is marinating, bring chicken broth to a boil in a saucepan.
- Add couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
- Grill the marinated chicken on medium-high heat for about 6-7 minutes on each side or until fully cooked.
- Fluff the couscous with a fork and serve it alongside the grilled chicken.
- Drizzle the remaining chimichurri sauce over the chicken and couscous before serving.
Notes
- For extra flavor, let the chicken marinate overnight.
- Feel free to add vegetables to the couscous for added nutrition.
