- 2 chicken breasts
- 1 cup chimichurri sauce
- 1 cup cooked rice
- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1 avocado, sliced
- 1/4 cup garlic sauce
- Salt and pepper to taste
Instructions
- Marinate the chicken breasts in chimichurri sauce for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, prepare the rice according to package instructions.
- In a bowl, layer the cooked rice, mixed greens, cherry tomatoes, red onion, and avocado.
- Once the chicken is cooked, slice it and place it on top of the bowl.
- Drizzle garlic sauce over the chicken and serve immediately.
Notes
- For a spicier kick, add red pepper flakes to the chimichurri sauce.
