- 2 chicken breasts
- 1 sheet of puff pastry
- 1 cup of mushrooms, finely chopped
- 1/2 cup of spinach, chopped
- 1/4 cup of cream cheese
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are soft.
- Add the chopped spinach and cook until wilted. Season with salt and pepper.
- Remove from heat and mix in the cream cheese until well combined.
- Roll out the puff pastry on a floured surface and cut it into two rectangles.
- Place a chicken breast on each rectangle and top with the mushroom and spinach mixture.
- Fold the pastry over the chicken and seal the edges.
- Brush the tops with beaten egg.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Let it rest for a few minutes before slicing and serving.
