- 1 lb chicken breast, sliced
- 2 tablespoons shawarma spice mix

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup tahini
- 2 tablespoons lemon juice

Instructions
- In a bowl, mix the sliced chicken with shawarma spice and olive oil. Let it marinate for at least 30 minutes.
- Cook the marinated chicken in a skillet over medium heat until fully cooked and golden brown.
- In a separate pan, heat the cooked rice until crispy.
- In a large bowl, combine the crispy rice, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together tahini, lemon juice, salt, and pepper to create the dressing.
- Top the salad with the cooked chicken and drizzle with the tahini dressing before serving.
