Ingredients

  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon liquid smoke
  • 2 tablespoons cumin
  • 2 teaspoons kosher salt
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup chopped cilantro
  • 4 cloves garlic, smashed and minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 3 small bell peppers, sliced
  • 1 medium onion, sliced
  • 1 teaspoon kosher salt (for veggies)
  • 12 6-inch flour tortillas
  • 1 cup shredded Monterey Jack cheese (optional)
  • Sour cream, Chipotle mayo, guacamole, lime wedges, cilantro for serving

Instructions

  1. Marinate the chicken: Slice chicken thighs into strips. Combine in a bowl with lime juice, soy sauce, liquid smoke, cumin, salt, chili powder, smoked paprika, onion powder, cayenne, cilantro, and minced garlic. Allow to marinate for at least 15 minutes.
  2. Prep the veggies: Slice bell peppers and onions into strips.
  3. Sear the chicken: Heat a cast iron skillet over medium-high heat. Add vegetable oil and then the marinated chicken. Sear for about 2 minutes on each side until cooked through.
  4. Cook the peppers and onions: Use the same skillet to sauté the sliced veggies with a pinch of salt for 2-3 minutes.
  5. Combine and serve: Mix the cooked chicken with veggies and serve in warmed tortillas. Top with sour cream, Chipotle mayo, and squeeze fresh lime juice over the top.

Notes

Don’t rush the marination process; marinating overnight enhances flavor. Customize by adding other toppings or using different proteins.
