- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 cup dry white wine
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a saucepan, heat the vegetable broth over low heat.
- In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
- Add the Arborio rice to the skillet and stir for 2 minutes until the rice is lightly toasted.
- Pour in the white wine and cook until it is mostly absorbed.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
- Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a richer flavor, use homemade vegetable broth.
- Adjust the amount of Parmesan cheese according to your taste.
