- 2 leeks, sliced
- 8 oz mushrooms, sliced
- 2 tbsp olive oil
- 1 cup Gruyere cheese, grated
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced leeks and cook until caramelized, about 10 minutes.
- Add the sliced mushrooms to the skillet and cook until they are tender and browned, about 5-7 minutes.
- Reduce the heat to low and stir in the heavy cream and grated Gruyere cheese until melted and combined.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
