- 4 chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups chicken broth
- 1 cup rice
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce and brown sugar until dissolved.
- Marinate chicken thighs in the soy sauce mixture for at least 30 minutes.
- Heat vegetable oil in a pot over medium heat.
- Add marinated chicken and cook until caramelised on both sides.
- Remove chicken and set aside. In the same pot, add garlic and ginger, sauté until fragrant.
- Pour in chicken broth and bring to a boil.
- Add rice and return chicken to the pot. Simmer until rice is cooked and chicken is tender.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
