- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup caramel sauce
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin spice
- 1 cup crushed ginger snap cookies
Instructions
- In a mixing bowl, combine pumpkin puree, powdered sugar, and pumpkin spice.
- In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the pumpkin mixture until well combined.
- In serving glasses, layer the pumpkin mixture, crushed ginger snap cookies, and caramel sauce.
- Repeat the layers until the glasses are filled.
- Drizzle additional caramel sauce on top and refrigerate for at least 2 hours before serving.
Notes
- For a lighter version, use low-fat whipped cream.
- Can be made a day in advance for convenience.
- Ginger snap cookies can be substituted with graham crackers if desired.
