Ingredients

  • 1 ½ cups dark chocolate chips, melted
  • ¼ cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare dry ingredients by whisking together the flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar in a large bowl using an electric mixer until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Combine the dry ingredients and milk, alternating between the two, starting and ending with the flour. Mix until just combined.
  6. Shape the cookies by spooning tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them 2 inches apart. Flatten each ball slightly.
  7. Bake for 10-12 minutes or until the edges are golden brown. Transfer to a wire rack to cool.
  8. Make the cream filling by whipping heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Prepare the chocolate ganache by mixing melted dark chocolate chips with heavy cream until smooth.
  10. Assemble by filling half of the cookies with cream filling, topping with another cookie, and drizzling with chocolate ganache.
