- ½ cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 1 ½ cups dark chocolate chips, melted
- ¼ cup heavy cream (for ganache)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare dry ingredients by whisking together the flour, baking powder, and salt in a medium bowl.
- Cream the softened butter and granulated sugar in a large bowl using an electric mixer until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture, mixing until well combined.
- Combine the dry ingredients and milk, alternating between the two, starting and ending with the flour. Mix until just combined.
- Shape the cookies by spooning tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them 2 inches apart. Flatten each ball slightly.
- Bake for 10-12 minutes or until the edges are golden brown. Transfer to a wire rack to cool.
- Make the cream filling by whipping heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Prepare the chocolate ganache by mixing melted dark chocolate chips with heavy cream until smooth.
- Assemble by filling half of the cookies with cream filling, topping with another cookie, and drizzling with chocolate ganache.
Notes
Consider using gluten-free flour for a gluten-free version or almond/coconut milk for a lactose-free option. Customize with different fillings or toppings!
