Description

Tender and juicy chicken thighs seared to perfection with a rich, creamy sauce infused with garlic, herbs, and lemon.


Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2 pounds)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika (smoked paprika optional)
  • Kosher salt and freshly ground black pepper (to taste)
  • 1 tablespoon butter
  • 1 small shallot (finely minced, about 2 tablespoons)
  • 3 cloves garlic (minced)
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • 2 sprigs fresh thyme
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup heavy cream
  • Fresh parsley (chopped for garnish)

Instructions

  1. Pat the chicken thighs completely dry using paper towels.
  2. In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and pepper. Rub this seasoning blend over each thigh.
  3. Heat olive oil in a cast iron skillet over medium heat. Place the chicken thighs skin-side down and cook for 7-8 minutes until golden brown.
  4. Flip the chicken thighs over and cook for another 10-12 minutes, until the internal temperature reaches 165°F.
  5. Transfer the thighs to a plate and tent with foil to keep warm.
  6. In the same skillet, melt butter and sauté the shallot and garlic until fragrant.
  7. Add chicken broth and lemon juice, along with thyme and crushed red pepper flakes, scraping up any browned bits.
  8. Stir in heavy cream and let the sauce simmer until thickened, about 5-6 minutes.
  9. Return the chicken thighs to the skillet, spoon the sauce over them, and garnish with parsley before serving.

Notes

Make ahead by seasoning chicken a few hours in advance. Can also be cooked in an oven at 425°F for 30-35 minutes.
