Tender and juicy chicken thighs seared to perfection with a rich, creamy sauce infused with garlic, herbs, and lemon.

- 6 bone-in, skin-on chicken thighs (about 2 pounds)
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika (smoked paprika optional)
- Kosher salt and freshly ground black pepper (to taste)
- 1 tablespoon butter
- 1 small shallot (finely minced, about 2 tablespoons)
- 3 cloves garlic (minced)
- 1/2 cup low-sodium chicken broth
- 1 tablespoon fresh lemon juice
- 2 sprigs fresh thyme
- 1/4 teaspoon crushed red pepper flakes
- 1/3 cup heavy cream
- Fresh parsley (chopped for garnish)
Instructions
- Pat the chicken thighs completely dry using paper towels.
- In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and pepper. Rub this seasoning blend over each thigh.
- Heat olive oil in a cast iron skillet over medium heat. Place the chicken thighs skin-side down and cook for 7-8 minutes until golden brown.
- Flip the chicken thighs over and cook for another 10-12 minutes, until the internal temperature reaches 165°F.
- Transfer the thighs to a plate and tent with foil to keep warm.
- In the same skillet, melt butter and sauté the shallot and garlic until fragrant.
- Add chicken broth and lemon juice, along with thyme and crushed red pepper flakes, scraping up any browned bits.
- Stir in heavy cream and let the sauce simmer until thickened, about 5-6 minutes.
- Return the chicken thighs to the skillet, spoon the sauce over them, and garnish with parsley before serving.
Notes
Make ahead by seasoning chicken a few hours in advance. Can also be cooked in an oven at 425°F for 30-35 minutes.
