- 1 cup rolled oats
- 1 cup blueberries (fresh or frozen)
- 1/2 cup almond slices
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cottage cheese, rolled oats, honey (or maple syrup), eggs, vanilla extract, baking powder, cinnamon, and salt until well combined.
- Gently fold in the blueberries and almond slices.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes, or until the top is golden and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
