Description

  • 8 oz melted dark chocolate
  • 1 can cherry pie filling
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix together the chocolate cookie crumbs and melted butter until well combined. Press evenly into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy (2-3 minutes).
  4. Add eggs one at a time, mixing thoroughly after each addition.
  5. Stir in vanilla extract and sour cream until fully incorporated.
  6. Gently fold in melted dark chocolate until combined.
  7. Pour the filling over the crust and smooth the top.
  8. Bake for 50-60 minutes until edges are set, but the center remains slightly jiggly.
  9. Turn off the oven and let the cheesecake cool inside for 1 hour.
  10. Chill in the refrigerator for at least 4 hours or overnight.
  11. Top with cherry pie filling and whipped cream before serving.
