Bird’s Nest Macaroons are delightful coconut treats shaped like nests, filled with chocolate eggs, perfect for Easter or any festive occasion.

- 2 1/2 cups shredded coconut
- 1/2 cup granulated sugar
- 2 large egg whites
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Chocolate eggs (for filling)
Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, combine shredded coconut, sugar, egg whites, vanilla extract, and salt.
- Mix until well combined and the mixture holds together.
- Using your hands, form small mounds of the mixture on the prepared baking sheet.
- Make an indentation in the center of each mound to create a nest shape.
- Bake for 20-25 minutes or until the edges are golden brown.
- Remove from the oven and let cool completely.
- Once cooled, fill each nest with chocolate eggs.
Notes
- Store in an airtight container for up to a week.
- For a variation, you can add food coloring to the coconut mixture.
- These macaroons can be made ahead of time and assembled just before serving.
