- 4 chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt, pepper, and paprika, then brown them in the skillet for about 5 minutes on each side.
- Remove chicken and set aside. In the same skillet, add butter, onions, garlic, and mushrooms, sautéing until softened.
- Add rice to the skillet and stir for 1-2 minutes.
- Pour in chicken broth and bring to a boil.
- Return chicken to the skillet, cover, and reduce heat to low. Simmer for 25-30 minutes until rice is cooked and chicken is tender.
- Serve hot, garnished with fresh herbs if desired.

- For extra flavor, marinate the chicken in spices for a few hours before cooking.
