- 4 large eggs
- 2 corn tortillas
- 1 cup of ranchero sauce
- 1/2 cup of refried beans
- 1/4 cup of crumbled queso fresco
- 1/4 cup of chopped cilantro
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- Heat the refried beans in a small pot over low heat.
- In a skillet, warm the corn tortillas until they are soft.
- Fry the eggs in the skillet to your desired doneness.
- On each plate, spread a layer of refried beans.
- Place a warm tortilla on top of the beans.
- Top each tortilla with a fried egg.
- Pour ranchero sauce over the eggs.
- Garnish with queso fresco, cilantro, and avocado slices.
- Season with salt and pepper to taste.
Notes
- For a spicier version, add jalapeños to the ranchero sauce.
- Serve with a side of fresh fruit for a complete breakfast.
