Description

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tsp sriracha (adjust to taste)
  • 1 tsp honey (optional)
  • 1 clove garlic, minced
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 2 green onions, sliced
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a skillet on medium heat.
  2. Season chicken pieces with salt and black pepper.
  3. Add chicken to the skillet and cook for 6-8 minutes until golden and fully cooked.
  4. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and minced garlic until smooth.
  5. Drizzle half of the Bang Bang sauce over the cooked chicken and toss to coat.
  6. In serving bowls, start with a scoop of rice, then pile on chicken, carrots, cucumber, cabbage, and green onions.
  7. Drizzle remaining Bang Bang sauce over the top and garnish with sesame seeds and cilantro.
  8. Serve immediately and enjoy!
