- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup mayonnaise
- 3 tbsp sweet chili sauce
- 1–2 tsp sriracha (adjust to taste)
- 1 tsp honey (optional)
- 1 clove garlic, minced
- 2 cups cooked white or brown rice
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup red cabbage, shredded
- 2 green onions, sliced
- Sesame seeds (optional, for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
- Heat olive oil in a skillet on medium heat.
- Season chicken pieces with salt and black pepper.
- Add chicken to the skillet and cook for 6-8 minutes until golden and fully cooked.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and minced garlic until smooth.
- Drizzle half of the Bang Bang sauce over the cooked chicken and toss to coat.
- In serving bowls, start with a scoop of rice, then pile on chicken, carrots, cucumber, cabbage, and green onions.
- Drizzle remaining Bang Bang sauce over the top and garnish with sesame seeds and cilantro.
- Serve immediately and enjoy!
