Delicious baked quesadillas filled with spinach and mushrooms, perfect for a quick meal or snack.
Ingredients

- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms until soft.
- Add the spinach and cook until wilted. Season with garlic powder, salt, and pepper.
- On half of each tortilla, layer the spinach and mushroom mixture, then sprinkle cheese on top.
- Fold the tortillas in half and place them on a baking sheet.
- Bake for 10-12 minutes or until the tortillas are golden and crispy.
- Cut into wedges and serve warm.
Notes
- Feel free to add other vegetables or proteins to the filling.
- Serve with salsa or sour cream for dipping.
- These can be made ahead of time and reheated in the oven.
