Delicious sweet potatoes stuffed with a spiced apple mixture, perfect for a cozy meal.
Ingredients

- 4 medium sweet potatoes
- 2 apples, diced
- 1/2 cup walnuts, chopped
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup raisins
- 2 tbsp butter
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for 45-60 minutes until tender.
- In a skillet, melt the butter and add the diced apples, walnuts, brown sugar, cinnamon, nutmeg, and raisins.
- Cook until the apples are soft, about 5-7 minutes.
- Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
- Stuff the sweet potatoes with the apple mixture.
- Serve warm and enjoy!
Notes
- Feel free to add more spices according to your taste.
- Can be made vegan by substituting butter with coconut oil.
- Leftovers can be stored in the refrigerator for up to 3 days.
