Ingredients

  • 4 medium sweet potatoes
  • 2 apples, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup raisins
  • 2 tbsp butter
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for 45-60 minutes until tender.
  4. In a skillet, melt the butter and add the diced apples, walnuts, brown sugar, cinnamon, nutmeg, and raisins.
  5. Cook until the apples are soft, about 5-7 minutes.
  6. Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
  7. Stuff the sweet potatoes with the apple mixture.
  8. Serve warm and enjoy!
