Ingredients

  • 2 cups sweet potatoes, peeled and cubed
  • 2 apples, cored and sliced
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sweet potatoes, apples, onion, garlic, sage, olive oil, salt, and pepper.
  3. Place the chicken in a roasting pan and season it with salt and pepper.
  4. Stuff the cavity of the chicken with some of the apple and sage mixture.
  5. Arrange the remaining mixture around the chicken in the roasting pan.
  6. Roast in the preheated oven for about 1.5 hours, or until the chicken is cooked through and the juices run clear.
  7. Let the chicken rest for 10 minutes before carving and serving with the roasted sweet potatoes and apples.
