- 1 whole chicken (about 4–5 lbs)
- 2 cups sweet potatoes, peeled and cubed
- 2 apples, cored and sliced
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 tablespoons fresh sage, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine sweet potatoes, apples, onion, garlic, sage, olive oil, salt, and pepper.
- Place the chicken in a roasting pan and season it with salt and pepper.
- Stuff the cavity of the chicken with some of the apple and sage mixture.
- Arrange the remaining mixture around the chicken in the roasting pan.
- Roast in the preheated oven for about 1.5 hours, or until the chicken is cooked through and the juices run clear.
- Let the chicken rest for 10 minutes before carving and serving with the roasted sweet potatoes and apples.
Notes
- For extra flavor, marinate the chicken in olive oil, garlic, and sage for a few hours before roasting.
- Feel free to add other vegetables like carrots or Brussels sprouts to the roasting pan.
- Leftovers can be stored in the refrigerator for up to 3 days.
