Ingredients

  • 4 pork chops
  • 1 cup apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon cinnamon
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, combine apple cider, brown sugar, Dijon mustard, and cinnamon. Bring to a simmer and cook until slightly thickened.
  3. Season the pork chops with salt and pepper, then sear them in a hot skillet for 3-4 minutes on each side.
  4. Transfer the pork chops to a baking dish and brush with the apple cider glaze.
  5. In a separate bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
  6. Roast the sweet potatoes in the oven for 25-30 minutes, until tender.
  7. Bake the pork chops in the oven for 15-20 minutes, until cooked through.
  8. Serve the pork chops with roasted sweet potatoes and drizzle with remaining glaze.

Notes

  • For extra flavor, marinate the pork chops in the glaze for a few hours before cooking.
