A delicious recipe for pork chops glazed with apple cider, served alongside roasted sweet potatoes.

- 4 pork chops
- 1 cup apple cider
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon cinnamon
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan, combine apple cider, brown sugar, Dijon mustard, and cinnamon. Bring to a simmer and cook until slightly thickened.
- Season the pork chops with salt and pepper, then sear them in a hot skillet for 3-4 minutes on each side.
- Transfer the pork chops to a baking dish and brush with the apple cider glaze.
- In a separate bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
- Roast the sweet potatoes in the oven for 25-30 minutes, until tender.
- Bake the pork chops in the oven for 15-20 minutes, until cooked through.
- Serve the pork chops with roasted sweet potatoes and drizzle with remaining glaze.
Notes
- For extra flavor, marinate the pork chops in the glaze for a few hours before cooking.
- Feel free to add other vegetables to the roasting pan with the sweet potatoes.
