Ingredients

  • 1 apple, cored and diced

  • Salt and pepper to taste

  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the brie cheese, diced apple, and thyme together.
  3. Cut a pocket in each chicken breast and stuff with the apple and brie mixture.
  4. Season the chicken with salt and pepper.
  5. In a skillet, heat olive oil over medium heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and pour chicken broth around it.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  8. Let rest for a few minutes before serving.
