- 1 lb chicken breast, cut into cubes
- 1/4 cup pineapple juice
- 2 tbsp adobo sauce
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Pineapple chunks for grilling
- Fresh cilantro for garnish
Instructions
- In a bowl, combine pineapple juice, adobo sauce, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
- Add the chicken cubes to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and pineapple chunks onto skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through.
- Garnish with fresh cilantro before serving.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Serve with tortillas and your favorite toppings for a complete meal.
- Adjust the spice level by adding more or less chili powder.
