- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup black beans, rinsed and drained
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup chopped green onions
- Guacamole and sour cream for serving
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and slice the sweet potatoes into thin rounds.
- In a bowl, toss the sweet potato slices with olive oil, chili powder, garlic powder, paprika, salt, and pepper.
- Place the sweet potato slices in the air fryer basket in a single layer.
- Cook for 10-12 minutes, shaking the basket halfway through, until crispy.
- Remove the sweet potatoes and layer them on a serving plate.
- Top with shredded cheese, black beans, diced tomatoes, and jalapeños.
- Return to the air fryer for an additional 2-3 minutes until the cheese is melted.
- Garnish with chopped green onions and serve with guacamole and sour cream.
Notes
- Adjust the toppings according to your preference.
- For a spicier version, add more jalapeños or a drizzle of hot sauce.
- Make sure not to overcrowd the air fryer basket for even cooking.
