- 1 package of refrigerated pie crusts
- 2 cups fresh peaches, peeled and diced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
- 1 tablespoon cinnamon sugar (optional)
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, combine diced peaches, sugar, cornstarch, and vanilla extract. Mix well.
- Roll out the pie crusts and cut them into circles.
- Place a spoonful of the peach mixture in the center of each circle.
- Fold the dough over to create a half-moon shape and seal the edges with a fork.
- Brush the tops with beaten egg and sprinkle with cinnamon sugar if desired.
- Place the hand pies in the air fryer basket in a single layer and cook for 10-12 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- Make sure to not overfill the pies to prevent leaking.
- Adjust the sugar based on the sweetness of the peaches.
- These can be served warm or at room temperature.
