- 4 ears of corn
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat the air fryer to 400°F (200°C).
- Carefully cut the corn cobs into rib-like pieces.
- In a bowl, mix olive oil, chili powder, garlic powder, smoked paprika, salt, and black pepper.
- Toss the corn ribs in the seasoning mixture until well coated.
- Place the corn ribs in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, flipping halfway through, until golden and tender.
- Remove from the air fryer and sprinkle with cotija cheese and cilantro.
- Serve with lime wedges on the side.

- Adjust the seasoning to your taste.
- For a spicier version, add cayenne pepper to the seasoning mix.
