Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Dip each eggplant stick into the beaten eggs, then coat with the breadcrumb mixture.
- Arrange the coated eggplant sticks in a single layer in the air fryer basket.
- Spray the sticks lightly with cooking spray.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot with marinara sauce for dipping.
